    Chocolate Fudge Recipe

I have been a fan of nigella lawson, i never miss a single cooking show of her..I have made and posted quite a few recipe of hers in my blog. This is one of her recipe, i saw her making this in her show long back. I have been longing to try this. But my busy schedule didn't allow me to try. But today i decided to give it a try.

What i did is, i tooked the recipe, modified it, actually microwaved it. Because many of my viewers asked me to post more microwave cake, cookies and sweets recipe after i shared my 5 min microwave mysorepak recipe. So this is for them. And saying this, i made a black forest cake today, you may ask me what is special in that..Yes there is a special thing, it is made in microwave and in 4 mins, frosted and ready to eat in just 30 mins. How cool is that..Will share the recipe tomorrow i hope so..

    Notes

1)If you dont have microwave, just take everything except pista in a sauce pan and heat it gently on stove. Once it is melted add in pista and continue with the remaining process.
2)Dont microwave on one go, first set timing to 1 min, if the chocolate is not melted in that timing, then pop again for 30 more sec. Dont over cook the chocolate.
3)My chocolate melted in 1 min itself.
4)You can add any nuts of your choice.
5)Lining the tray with foil or parchment helps in taking the fudge out of the tray easily.
6)This fudge should be stored in fridge always.

      Hi Aarthi!

I had some caramel sauce( in which I used milk in place of cream, as cream is not available at Dindigul. The texture was similar to condensed milk). I used that with compound chocolate, cashew, pistachios and added some chilly flakes for surprise. Its softer than yours. I have to refrigerate the batch. But the taste.... Simply superb!!!

What is the secret to good fudge? ›

    • Monitor the Temperature with a Candy Thermometer. If you end up with soft fudge that turns into a puddle in your hands or hard fudge that is a bit reminiscent of a crunchy candy, improper temperature is likely to blame. ...
    • Avoid Stirring Once the Mixture Comes to a Simmer. ...
    • Beat Thoroughly.
    Mar 8, 2023

How do you know when fudge is beaten enough? ›

After letting the fudge cool, it's time to beat it. It is important to stir constantly with a wooden spoon until the mixture starts to thicken and its surface starts to look dull or matte. Now is the time to stop beating and pour the fudge into a mould.

Why is my 2 ingredient fudge not setting? ›

One possibility is that the ratio of ingredients may be off, resulting in a fudge that is too soft or runny. So make sure you measure your ingredients correctly. Another factor could be the quality of the ingredients used using low-quality chocolate or condensed milk may affect the setting process.

Is evaporated milk or condensed milk better for fudge? ›

Use Evaporated Milk- Make sure to use evaporated milk and not sweetened condensed milk. If you accidentally use sweetened condensed milk your fudge will be incredibly over the top sweet. Cut up the Butter– Before adding the butter in make sure to cut it into smaller pieces for faster melting.

What makes high quality fudge? ›

You have to control two temperatures to make successful fudge: the cooking temperature AND the temperature at which the mixture cools before stirring to make it crystallize. Confectionery experiments have shown that the ideal cooking temperature for fudge is around 114 to 115 °C (237 to 239 °F).

What is the secret to smooth fudge that is not gritty? ›

Once a seed crystal forms, it grows bigger and bigger as the fudge cools. A lot of big crystals in fudge makes it grainy. By letting the fudge cool without stirring, you avoid creating seed crystals.

What happens if you over stir fudge? ›

Once the sugar has dissolved and the mixture has come to a boil, do not stir it. If you do, the sugar can crystallize, giving your fudge a gritty texture. As you beat the fudge, pay attention to color and texture. Once the fudge loses its sheen and thickens, put down your spoon.

Should I stir fudge while boiling? ›

Stir the ingredients to dissolve the sugar until the mixture comes to a boil. If your recipe uses milk, stirring will keep the mixture from curdling. But once it reaches about 236–238 degrees F/113–114 degrees C (the "soft-ball" stage), do not stir it or even shake the pan.

What should fudge look like after beating? ›

The fudge is then beaten as this makes the fudge slightly crumbly rather than chewy. Beating the mixture encourages the formation of small sugar crystals, which leads to the crumbly texture. The crystals may not be noticeable in themselves but the fudge mixture will thicken and turn from shiny to matte in appearance.

Can I fix fudge that didn't set? ›

OPTION 3) Sieve together some powdered sugar and cocoa powder, and gradually work this into your unset fudge until it reaches the consistency of dough, then roll out and cut into squares, or shape into balls and then roll in powdered sugar (roll the balls in icing sugar, not yourself).

Can you fix fudge that didn't harden? ›

How can you fix soft fudge? Put it in a microwave safe bowl that is large enough that it won't boil over. Reheat it to the boiling point and cook for about 3 more minutes. Then you can beat some powdered sugar into it if this doesn't make it set.

What can I do with ruined fudge? ›

To fix oily, hard or grainy fudge, scoop the fudge back into a pot with about a cup of water. Cook it over low heat until the fudge dissolves. Then bring the fudge back up to the temperature specified in the recipe and follow the remaining steps. The flavor may be slightly diluted, but the texture will be improved.

Can I use heavy whipping cream instead of evaporated milk in fudge? ›

With its very similar consistency, 1 cup of heavy cream can replace 1 cup of evaporated milk in sweet and savory dishes. While the flavor will be blander than evaporated milk's unique caramelized tones, the texture will be noticeably richer.

Why is condensed milk not advisable? ›

Evaporated milk has added sugar and carbohydrates which are very high, making sweetened condensed milk not healthy for nutritional intake for babies and children, Ali explained.

Why is my condensed milk chocolate fudge not setting? ›

You didn't cook it long enough. Fudge needs to be heated to the "soft ball" stage. It is salvageable, but you'd have to be very careful of sugar crystallization. If you make a mistake you'll wind up with a grainy mess.

What does cream of tartar do in fudge? ›

Cream of tartar is used in caramel sauces and fudge to help prevent the sugar from crystallizing while cooking. It also prevents cooling sugars from forming brittle crystals, this is why it's the secret ingredient in snickerdoodles!

What keeps fudge from getting hard? ›

Too Soft or Too Hard Fudge

The amount of time you cook fudge directly affects its firmness. Too little time and the water won't evaporate, causing the fudge to be soft. Conversely, cook it too long and fudge won't contain enough water, making it hard with a dry, crumbly texture.

How do you keep fudge smooth? ›

If the sugar crystals are not properly dissolved before cooling, they can create a gritty texture. To avoid this, ensure that you stir the fudge mixture consistently and remove any sugar crystals that form on the sides of the pan using a wet pastry brush.

What would cause fudge not to harden? ›

The main reason is that your Fudge has not reached the optimum temperature. If your mixture only reaches 110 or 112 degrees Celsius it will always be soft. That's why we recommend investing in a sugar thermometer. Another reason your Fudge is not setting is that the ratio of liquid to sugar is too high.
